Let’s make it
one step at a time- 01
Heat oven to 175°C / 350°F. Grease and line two 20 cm / 8-inch round pans with parchment; lightly dust with flour.
- 02
Whisk the flour, baking powder, and salt together.
- 03
Beat butter and sugar until pale and fluffy, 3–4 minutes. Beat in the oil until incorporated.
- 04
Add eggs one at a time, beating after each. Mix in vanilla.
- 05
Add the flour mixture and milk alternately: one-third flour, half milk, one-third flour, remaining milk, then remaining flour. Mix just until smooth.
- 06
Gently fold in the rainbow jimmies with a spatula.
- 07
Divide batter evenly between pans. Bake 25–30 minutes, until a toothpick comes out clean. Cool in pans 10 minutes, then turn out onto racks to cool completely.
- 08
For optional buttercream, beat butter until light and fluffy, 3–5 minutes. Gradually beat in powdered sugar. Add milk or cream, vanilla, and salt. Beat another 2–3 minutes until spreadable. Fold in optional sprinkles.
- 09
Level the cooled layers if needed. Frost between layers, crumb-coat, chill 20 minutes, then add the final frosting coat. Decorate with sprinkles if desired.
That’s a good thing made.
Enjoy every bite.
